It’s fall! Finally. But before we get inundated with all things pumpkin, let’s take a moment to appreciate the incomparable sweet potato! Let’s get into the sweet potato pancakes.
As a kid, I’d convinced myself that I hated sweet potato. Fruit is sweet, veggies are savory. Why would I want sweet veggies?? It wasn’t until recently, with the help of good old southern hospitality, that I began my love affair with sweet potato.
Now I roast ’em, broil ’em, bake ’em, mash ’em, and pie ’em.
Used in many desserts, sweet potato is unique in that it packs a nutritious punch. Containing a significant amount of magnesium, calcium, and iron, eating these root veggies consistently helps to prevent diabetes, cancer, and ulcers. These earthy sweets can boost fertility, help vision, and enhance memory.
This sweet potato pancakes recipe contains canna-coconut oil. Cooking with vegetable oil and butter can cause inflammation which leads to disease. Coconuts, on the other hand, naturally produce compounds to ward off bacteria.
Two of these sweet potato pancakes took one hour to “kick in” for me and two hours for my roommate. 25mg of THC per 2 medium pancakes.
Ingredients
1 medium sweet potato
2 tablespoons apple cider vinegar
1 & 1/4 cup almond milk
2 tablespoon cannaoil
2 teaspoon vanilla
1/8 teaspoon salt
1 & 3/4 cups flour
3 tablespoon sugar
1/4 teaspoon nutmeg
2 teaspoon cinnamon
1 teaspoon baking soda
2 teaspoon baking powder
Instructions
- Preheat oven to 425°
- Use a fork to poke holes in a clean medium sweet potato
- Wrap in foil
- Bake for 45 min or until tender
- Combine dry ingredients in small bowl, set aside: flour, baking powder, baking soda, salt, sugars, cinnamon, nutmeg. Lightly whisk to combine
- Remove sweet potato from oven and let cool
- Peel sweet potato
- Chop sweet potato into chunks
- Use blender or hand mixer to puree sweet potato and vanilla. 3 min
- Combine wet ingredients in large bowl: sweet potato mixture, canna coconut oil, milk, apple cider vinegar. Blend or hand whisk 3 min
- Mix dry mixture into wet mixture until just combined. Batter will be thick
- Heat cast iron pan to medium heat. Medium high if you like crispy edges
- Add 1 tablespoon of canna oil and 2 tablespoons of carrier oil to pan (olive, coconut, grapeseed, avocado, vegetable)
- Scoop 1 cup batter rounds into pan
- Cook first side for 1 min 30 sec - 2 min. Flip. Cook second side for 2 min
- Plate and serve with desired toppings
